Physicochemical Properties of Xanthan Gum
Xanthan gum is a natural polysaccharide produced through the fermentation of carbohydrates by bacteria called Xanthomonas campestris. In its pure form, it appears as a white to light yellow powder with a neutral odor and taste. It dissolves easily in cold and hot water, forming stable, high-viscosity solutions even at low concentrations.
One of the key properties of xanthan gum is its ability to thicken and stabilize water-based systems across a broad pH range (from 4 to 10), including in the presence of salts. This raw material is highly resistant to temperature fluctuations – it retains its performance when heated up to 100°C, as well as during freezing and thawing processes, typically around -18°C. Xanthan gum also demonstrates excellent compatibility with other thickeners and emulsifiers, making it suitable for use in a wide variety of industrial formulations.
From a chemical standpoint, xanthan gum is a copolymer composed of glucose, mannose, and glucuronic acid units. This unique structure gives it exceptional rheological properties, enabling the formation of viscoelastic solutions that remain stable even under extreme environmental conditions.
